Food Safety Week and the 4 C's You Need to Consider

Although the focus of Food Safety Week (June 10th-14th) is on domestic kitchens, the emphasis on the 4 C’s of cooking, cleaning, chilling and cross-contamination is equally important in business settings.

As a partner to thousands of businesses around the UK, providing essential equipment through its dedicated catering division, commercial solutions specialist JLA is well-placed to help organisations of any size meet requirements in key areas.

Cooking

Is your equipment able to cope with your demands – and deliver consistency of temperature and quality across dozens of portions at a time? It may be time to consider a commercial oven range or a combi oven to ensure your food is always served at its best and is cooked to the temperatures required.

Cleaning

Food settings, particularly in care and healthcare businesses, must achieve a certain standard of cleanliness. Neglecting best practices can lead to health risks, and in addition to making sure high standards of cleaning are reached in areas such as dishwashing, it is vital to ensure the appropriate commercial detergents are used rather than potentially lower-grade, less powerful domestic alternatives.

Chilling

It’s vital that your fridges and freezers maintain the low temperatures required even as your kitchen gets hotter and hotter. HACCP reporting should also be a consideration, and commercial refrigeration units with clear temperature displays make life easier when it comes to audit trails.

Cross-contamination - dishwashing

Washing up by hand carries many variables, such as water temperature and cleaning action – as well as the uncertainty of washing in dirty water.  As such, a commercial kitchen employing this method risks not being able to eradicate germs after each meal. A commercial dishwasher on the other hand can thermally disinfect hundreds of plates and cutlery items in minutes, and greatly enhance food safety.

Cross-contamination – laundry

Chef whites and overalls can collect bacteria from various sources during a working day, and traditional washing may struggle to decontaminate garments after a shift. In contrast, OTEX ozone disinfection offers a straightforward and verifiable alternative, killing 99.999% of bacteria such as Norovirus, MRSA, Salmonella and other threats all at low or ambient temperatures –therefore saving a third on utility bills.
