A commercial deep fat fryer is a heavy-duty cooking appliance that’s designed and built for frying food at scale. Offering a larger capacity than standard domestic fryers, professional deep fryers also benefit from additional features that speed up heating times and help ensure consistency and safety batch after batch.
There are a wide variety of fryers used for professional use in commercial kitchens, including single-basket and twin-basket fryers, and those powered by electric or gas. Other variations include ribbon, rack and tube fryers, single or double tank, as well as countertop and freestanding models.
It’s difficult to say which is better since both offer their own benefits and pitfalls.
Commercial electric fryers offer fast heat-up times and improved efficiency and are also much more portable than gas variants since they don’t need to be connected to a gas outlet.
Commercial gas fryers, on the other hand, offer higher cooking temperatures which may make them better suited to preparing certain foods. They may also be cheaper to run in the long term.
The main difference between commercial deep fryers and commercial air fryers is how they work and the amount of oil required to ensure consistent and even results.
While catering deep fat fryers can run on electricity or gas, air fryers use electricity only. The flavour of the finished product can also differ, which is all down to the amount of oil used.
