With energy costs staying stubbornly high and ambitious sustainability goals firmly in mind, many of our catering customers continue to ask us for advice on ways they can save energy and reduce running costs in commercial kitchens of all sizes.

In this post, we look at some practical ideas you could start implementing today. Because whether it’s new staff training, looking at new technology options, or even rethinking the layout of your kitchen, there are always opportunities to make a difference.

Commercial kitchen equipment

Consider newer, more energy-efficient commercial kitchen appliances

Rapid advances in equipment design and manufacturing techniques mean the latest generation of kitchen appliances now feature high density insulation, superior door gaskets, and double or triple paned glass – all designed to conserve energy and save you money in the long run.

Many of these modern units also feature smarter electronic controls that automatically adjust energy use based on load or temperature, reducing waste and optimising cooking times.

Explore convection cooking and combi ovens

The type of equipment you choose can have a big impact on your kitchen’s efficiency. Convection and combination technologies present two stong options, with both capable of saving energy without any compromise to cooking performance.

Convection cooking is generally more energy efficient because a built-in fan circulates hot air evenly around the food. This means dishes cook faster, with more consistency, and at lower temperatures than in a conventional oven.

A commercial convection oven’s improved heat transfer also means the oven will run for less time and uses less energy overall. What’s more, convection systems allow multiple trays of food to be cooked uniformly, all at once – increasing capacity while maintaining quality during your busiest meal times.

Combi ovens, meanwhile, use steam combination technology to cook food faster than conventional ovens, again using less energy – and lowering running costs – over time. Combi ovens also tend to heat up far more quickly than standard ovens, reducing the need for lengthy preheating and cutting your electricity use even further.

Some equipment types, such as fryers, tend to be less energy efficient, so using them more selectively – or simply replacing them with alternative appliances where possible – can also help reduce your kitchen’s energy consumption.

Change habits through staff training

You and your team have a big role to play in making your kitchen more efficient. And change doesn’t have to feel disruptive, either. Here are some simple adjustments to consider.

• Avoid leaving appliances on unnecessarily, and make sure temperatures aren’t set higher than needed.
• Keep fridge and freezer doors closed as much as possible. Try to avoid any open door prep habits, and report any issues with damaged or worn seals as soon as they’re spotted.
• Switch off lights in any empty or unused areas to stop energy being wasted.
• Use convection settings where available – these cook food much faster and at lower temperatures, helping to reduce energy use.
• Carry out end-of-service checks to make sure your lights and appliances are switched off, doors are closed, and any heating or aircon systems are shut down before staff head home for the day. In some cases, such as cooking appliances, this can also help improve safety.
• Develop a culture of efficiency by using simple notices and prompts to remind your team of good energy-saving habits.

Revisit your kitchen layout

Separating out your kitchen’s hot and cold zones is another effective way to improve energy efficiency, and should be a big priority if you’re designing a new kitchen or looking to upgrade an existing setup.

Where possible, you’ll want to position your cold storage – including walk-in or reach-ins – near your receiving and prep areas, rather than close to cooking lines. This keeps refrigeration well away from the hottest parts of the kitchen, and also supports a more efficient workflow.

Placing commercial fridges and freezers next to ovens, fryers, hobs or other cooking appliances will also force them to work harder to maintain safe temperatures. If full separation isn’t practical, physical barriers could also help reduce heat transfer between hot and cold zones.

Classifying commercial washing machines by capacity

Typically, we classify commercial washers into three core categories:

1. Small, light-duty washing machines
2. Medium/large, heavy-duty washing machines
3. Industrial-grade washing machines

It isn’t just size and capacity that dictate into which category a washer belongs; durability, frequency of use, and required floorspace also play a part.

With that in mind, let’s take a closer look at the three different categories of commercial washing machines available from JLA.

Small, light-duty washing machines

When we refer to a light-duty, small capacity washing machine, we’re talking about appliances that can accommodate loads of 5-8 kg, which are typically used for a maximum of 8-10 cycles per day. From a size perspective, they’re comparable to their domestic equivalents, while also being much more durable and built specifically for business use.

  • Hair salons, beauticians, and similar businesses

  • Small hotels, guesthouses and other medium-sized accommodation types
  • Social care facilities
  • Spas, leisure centres, and similar organisations
  • Coin-operated appliances in launderettes and self-service laundries

– Significant floorspace requirements
– May require additional training and supervision to operate

Which types of businesses might suit an industrial commercial washer?

Industrial laundry machines are reserved only for organisations with the highest laundry turnover requirements. This might include:

  • Large-scale hotels and accommodation providers
  • Hospitals and care facilities
  • Commercial laundries that specialise in linen processing
  • Prisons and comparable facilities

Which factors determine the size and capacity of your commercial washing machine?

By now, you should have a general understanding of the types of commercial washing machines available and the organisations that they’re typically suitable for. But there are other factors that can affect the size and capacity of the washer that will be the right fit for your business, as detailed below.

Laundry volume
It goes without saying that your current volume of laundry is the number one deciding factor in the size and capacity of a washer that is right for your business. However, what if your average laundry volume were to suddenly increase? Is it possible to scale to accommodate?

In this scenario, it might be possible to install multiple machines, particularly stacked units that can sit one on top of another. This provides scope to scale up your laundry capacity without encroaching on available floorspace; it also means you’re not solely reliant on a single machine.

Industry sector
While equipment capacity varies based on demand and the size of the laundry room, different industry sectors often use different types of commercial washing machines.
Commercial outsourced laundry providers and hospitals typically use industrial-grade machines in order to fulfil high and consistent laundry volumes. Meanwhile, restaurants, hair salons and social housing often use smaller, more compact appliances to fulfil their laundry needs.

Physical space
It’s not uncommon for the availability of physical space to dictate the size and capacity of a commercial washing machine. We often work with businesses that are hamstrung by the limitations of their laundry space and must, therefore, find a suitable workaround solution wherein their laundry requirements are met.

When assessing the available space within a commercial laundry, it’s important to factor in the following:

  • Available floor area
  • Doorway and hallway width for delivery
  • Height/ceiling clearance
  • Ventilation and ductwork space

In many instances, stackable laundry equipment can often prove the perfect workaround solution, doubling your load capacity in the floor space of a single appliance. Stacking a washer and dryer together frees up floor space and utilises the usable height of your room, so you can increase your laundry processing throughput by 50%.

Specialist requirements
In some cases, the commercial washing machine you need isn’t dictated by size and capacity, but by the type of features and capabilities a certain type of machine affords. For instance, in environments like care homes and hospitals, barrier washing machines are needed to ensure maximum hygiene and infection control, so this will be the key deciding factor beyond general size and capacity.
